Angel Hair Crab Cakes (19.3mb)
Yield: 4 servings

Ingredients:
- 1# jumbo lump crabmeat
- 1C Japanese breadcrumbs
- 1 red bell pepper (small dice)
- 1 red onion (small dice)
- 1 stalk celery (small dice)
- 2T mayonnaise
- 1T Dijon mustard
- 1t Old Bay seasoning
- 1 whole egg
- 2C cooked angel hair pasta (chopped)
- 1t Tabasco
- 1t Worcestershire sauce
- S&P TT

Preparation:
Set crabmeat and breadcrumbs aside. In a large bowl, mix remaining ingredients. Gently fold in crabmeat and breadcrumbs. Form to make 8, 3oz cakes.

Turnout:
Preheat oven to 350. Preheat a sautée pan or skillet over med heat. Add olive oil to coat pan. When oil is hot, lightly sautée cakes on both sides until golden brown. Remove from pan and place in oven for 5-7 minutes or until fork inserted in center comes out hot. Serve with your favorite seasonal accompaniments.

Steak And Mushroom Salad
Yield: 4 servings

Ingredients:
-16oz London broil
-1 bag of pre washed field greens
-12ea. Medium Portobello mushrooms (stem removed)
-8oz red + 8oz yellow teardrop tomatoes
-1red + 1 yellow bell pepper (roasted, skinned and seeded)

Balsamic Vinaigrette:
-1C Balsamic vinegar
-3C blended oil
-1/2C sugar
-2t honey
-1t Dijon mustard
-S&P TT.

Preparation:
Prepare vinaigrette by whisking together all ingredients and refrigerate. Grill or broil Portobellos 3minutes per side, season with salt and pepper and set aside to cool. Season London broil with salt and pepper and grill or broil 7 minutes per side for medium rare or to desired doneness and set aside to rest for 8 to 10 minutes.

Turnout:
Arrange 4 plates with 3 mushrooms each. Toss greens with vinaigrette and form a pile in the center of the mushrooms. Slice steak on a bias and arrange around greens. Garnish with tomatoes and pepper strips and serve immediately.
